Le Bernardin recently revamped its look as well as its menu, which is a perfect excuse to revisit, or sample for the first time, this New York seafood institution. Chef Eric Ripert’s mission is still focused on making the fish the star of the plate, and one of his best tributes to fish’s natural flavors is his take on crudo – simple, fresh, and elegant – and he devotes a serious section of the new menu to raw fish.
