Grilled Pork & Fresh Fig Skewers
As much as we enjoy grilling peaches, we’re especially pumped that our favorite summer fruit, fresh figs, has just hit farm stands. Not only do figs take perfectly to open flame, they’re also the perfect accompaniment to smoky, roasted meats. That’s why we highly recommend making these Honey Mustard-Marinated Pork & Fig Skewers for Labor Day this year… because do you really want to fill the grill with hot dogs for the last big party of the season?
Grilled Pork and Fig Skewers
(Serves 4)
Ingredients:
1 pound pork tenderloin, cut into 1 inch pieces
2 tablespoons of honey
2 tablespoons of Dijon mustard
2 tablespoons of seasoned rice vinegar
2 tablespoons of orange juice
1 clove garlic, minced
8 large fresh figs, halved
Directions:
Combine honey, Dijon mustard, vinegar, orange juice and garlic in a resealable bag. Add tenderloin pieces and let sit for 30 minutes. Alternately thread tenderloin pieces and figs onto skewers. Place on a preheated grill and cook for about 8 minutes turning every two minutes, or until done.
